Imagine you are wandering through the labyrinth of passages in the medieval medinas of Fez. The air is redolent from the vibrant mounds of fragrant spices. The colors from the Berber dye vats shimmer jewel tones in the glimmer of sun. The smoke from open grills sets your taste buds a-watering. The experience is both exotic, full of adventure and oddly familiar, intriguing, and beckoning. Moroccan cuisine, one of the most diversified in the world, grew out of centuries of influence from the world to the north – the Moors, Europeans, especially Portuguese, and the Mediterranean. Great explorers established enclaves there as they expanded crucial spice routes from Europe, the Middle East and Asia. Spices are king in Moroccan dishes.

oo’mämē Moroccan Chile Crisp celebrates the traditions of these ancient markets and has at its core the famous Ras el Hanout. Traditionally, twenty-seven spices make up this epic blend, similar in its individuality to India’s garam masala. Every store and every family – like oo’mämē – have their own recipe. This Arabic name, meaning “head of the shop”, promotes the proprietary blend of the best possible spices that the seller currently has on hand. Our unique blend, like Ras el Hanout, relies on peppercorns, piquant red chiles, nutmeg, cinnamon, clove, ginger, anise, coriander and so much more. Unlike Ras el Hanout, which is a mix of ground spices, we leave many of our ingredients whole, delivering pops of flavors for a delightful surprise.

We have married our own Ras el Hanout with umami-rich fermented black beans, jammy figs, fragrant orange peel, sweet ginger, and crunchy sesame seeds and roasted almonds. I have tried a lot of seasonings and this is about 500 miles ahead of the rest. Absolutely delicious. Perfection in a jar.

Day 3 of oomame 1lb ground chicken (not the tasteless ground chicken breast) 2 heaping spoons of Moroccan Chopped red onion Salt and pepper 4 burgers, on English muffin, slice of Swiss, topped with a mix of 1 tablespoon each Mayo, low fat sour cream and fresh dill

My three sons and I were “introduced” to oo’mämē by pure happenstance, and our cooking and enjoyment of foods have never been the same. The team at oo’mämē has long done its part in taking care of us promptly whenever we run-low on any of the succulent and unique food-enhancing ‘mixers’ that we use to feed our oo’mämē addiction. I commonly give a jar-as-gift, and the gift recipients are always appreciative of & intrigued by receiving such a ‘fun’ gesture from me — You should do the same!
